Following a devastating fire in 2022, the owners of Texas French Bread assembled a team to rebuild and reimagine the space that once held a bakery and lively dining room on a well-known corner near the UT campus. Pollen joined the team lead by STG Design; our focus is on the front of house and interior design.  The design seeks to clarify circulation in and through the space, and to make an impressive display of TFB products in front of the remaining wall from the original structure.  A long central counter houses three program elements integral to TFB’s business throughout the day – a coffee bar, pastry display, and counter seating for a wine bar and evening dinner service. The backdrop to the counter is a full-length steel and wood shelving system that holds freshly baked bread.  The dining room is designed to be reminiscent of the former loft-like space, with high ceilings, ‘french door’ windows and exposed brick. Just as ‘Texas French’ contains a paradox, the design is eclectic, intentionally including elements from different periods and locale to add character and patina to the space.
